Coconut Chia Pudding

Simple 5 ingredient pudding in 5 minutes.

There are many benefits of adding chia seeds to your diet, they are a gluten free protein with all the essential amino acids your body requires. They are also high in Omega3, fibre, calcium, magnesium, zinc, selenium and iron.

150 mls coconut milk

1 tbsp chai seeds

1 tbsp dried coconut

1 tsp vanilla extract

Pinch of Himalayan pink salt 

Add all the ingredients to a jar with lid and shake well.

Leave in the fridge to soak for at least two hours, preferably overnight.

The seeds will soak up the liquid and thicken the mix.

Such a handy base for a breakfast stack, simply layer with granola, berries, chopped watermelon, apple or whatever you fancy! Top with honey, maple syrup or nut butter.
