Smoothie Pops

Juicy Lucy Smoothie Pops


After searching far and wide for snazzy ice pop moulds in Galway, I found this "ice shot-glass mould" in Mr. Price. It's perfect, I just removed the inserts. They sell the lolly sticks too and giant elastic bands, two of which around the long end holds the sticks in place for freezing (see pic above). All in all, it cost about a fiver to fashion this little set up, and it makes 12 at a time. 

Ingredients:
3 ripe, frozen bananas
2 passion fruit
A handful of frozen berries (I used strawberries)
3 tbsp Greek Yogurt (or coconut yogurt, if you wanna keep it Vegan)
150ml apple juice/nut mylk of your choice
In a blender, whizz everything except the berries and the passion fruit, pour half into a jug and miz in the passion fruit pulp, then pour into the moulds, freeze, and give it 20 mins to set. Add the berries to the blender and whizz until smooth. Leave the remaining smoothie in a jug, in the fridge, until the first layer is starting to set, then pour it on top. Let set for an hour or overnight, and rinse the bottom of the tray under the tap to easily remove the frozen pops, voila!
