Granola Bars

These fellas really are the perfect little snack because they keep you full for ages and don’t provide a sugar overload. They are simple to throw together, only contain six ingredients and no baking required.

They also pack in plenty of healthy fats from the almonds and peanut butter, and lots of fiber from the oats. Afternoon and mid-morning snack, here we come!

 
1 cup of dates, squashed in
1/4 cup honey/maple syrup
1/4 cup nut butter of your choice (we used peanut - classic)
1 cup roasted, unsalted almonds, roughly chopped
1.5 cups oats - we used GF, just cos.
1/2 cup pumpkin seeds
(If you like, you can add 1/4 cup of dark chocolate chips, banana chips, whatever takes your fancy.)

To make:

Whizz dates in a food processor until a dough like ball forms.
In a large bowl, mix the oats, almonds and dates together.
Gently warm the nut butter and honey in a small saucepan until loose, and then mix everything together really well in the large bowl.
Once thoroughly mixed, transfer to an 8x8 dish or other small pan lined with plastic wrap or parchment paper so they lift out easily. Press down well.
Refrigerate for 15-20 mins to firm it up. They'll keep well in an airtight container for 4-5 days, or can be frozen as individual bars and defrosted daily.
P.S. If your dates don't feel sticky and moist, soak them in water for 10 minutes then drain before processing. This will ultimately help hold the bars together better.
