We absolutely love banana bread!
This is a really easy recipe to throw together and super tasty.
For variation swop the walnuts for pecans or brazil nuts.
This loaf will love it!
100g chopped dates
200g white spelt flour
1.5 tsp ground cinnamon
2 tsp baking powder
1/2 tsp bread soda
120ml coconut oil
2 large eggs
3 ripe bananas - mashed up
Preheat your oven to 150C. Grease a 900G loaf tin with coconut oil.
Chop the dates, place in a bowl and cover with boiling water. Set aside.
Sift all dry ingredients into a large bowl and mix well.
Blend the warmed coconut oil, honey and eggs together. Stir in bananas.
Mix wet and dry ingredients together until smooth. Add walnuts.
Drain dates and add to the mixture. Stir well.
Pour into prepared tin/muffin cases and bake a loaf for an hour, maybe an hour and ten - and muffins for about 20 minutes, until a skewer comes out clean.
Cool on a wire rack. Try not to eat them all yourself!
